軽井沢町の隣の佐久市は、酒造りで有名な場所でもあります。
本日は、その佐久市の酒造ツアーに参加してまいりました。
Saku, a neighboring city of Karuizawa, is known as area of old sake factories.
We visited some of the factories today.
まずは、千曲錦酒造さん。
We visited Chikuma Nishiki sake factory
社長さんによる解説を聞きながら、見学をさせていただきました。
We looked around the factory with the owner.
蒸した米が運ばれてくる様子
Steamed rice was carried.
普通に炊いた米よりも、やや硬い仕上がり
Steamed rice is a bit harder than regular meal rice
水は浅間の井戸水を使っているそうです
The water comes from Mt. Asama ground water
米と麹と水で酵母菌を繁殖させています
Using rice, rice-malt, water, yeast fungus is reproduced.
バナナのような甘い香りがしました
This smelled like sweet banana.
次に橘倉酒造さんへ
We visited Kitsukura sake factory.
種麹も見せてもらいました これを蒸した米にふりかけます
This is yeast starter, spreaded over steamed rice.
ぽこぽこと酵母菌が繁殖しています
yeast fungus is reproduced.
軽井沢から新幹線で1駅の佐久。軽井沢とはまた違った文化のある街です。

Saku is just one station from Karuizawa by shinkansen. It has a quite unique history and culture.
